Garlic Roasted Green Beans and Mushrooms

Perfect as a flavorful side for chicken, fish, or lentil dishes.High in fiber, rich in antioxidants, and satisfying enough to reduce cravings for heavier sides.

📝 Ingredients (4 servings):

  • Fresh green beans – 4 cups, trimmed

  • Mushrooms – 2 cups, sliced (baby bella or cremini work great)

  • Extra Virgin Olive oil – 1.5 tablespoons

  • Garlic powder – ¼ teaspoon (or to taste)

  • Sea salt – 1/2 teaspoon

  • Black pepper – 1/4 teaspoon

  • Optional: Fresh lemon juice or grated parmesan (1 tbsp)


🔥 Instructions:

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, toss green beans and mushrooms with olive oil, garlic, salt, and pepper.

  3. Spread on a parchment-lined baking sheet in a single layer.

  4. Roast for 20–25 minutes, stirring halfway through, until veggies are tender and slightly crispy on the edges.

  5. Optional: Squeeze a bit of fresh lemon over the top before serving or sprinkle lightly with parmesan for added flavor.
