Garlic Roasted Green Beans and Mushrooms

📝 Ingredients (4 servings):
Fresh green beans – 4 cups, trimmed
Mushrooms – 2 cups, sliced (baby bella or cremini work great)
Extra Virgin Olive oil – 1.5 tablespoons
Garlic powder – ¼ teaspoon (or to taste)
Sea salt – 1/2 teaspoon
Black pepper – 1/4 teaspoon
Optional: Fresh lemon juice or grated parmesan (1 tbsp)
🔥 Instructions:
Preheat oven to 400°F (200°C).
In a large bowl, toss green beans and mushrooms with olive oil, garlic, salt, and pepper.
Spread on a parchment-lined baking sheet in a single layer.
Roast for 20–25 minutes, stirring halfway through, until veggies are tender and slightly crispy on the edges.
Optional: Squeeze a bit of fresh lemon over the top before serving or sprinkle lightly with parmesan for added flavor.
