Gluten-Free Honey Muffins (No Refined Sugar)

I baked these muffins recently using ingredients I already had on hand, without much expectation — and they turned out great! They’re lightly sweet, filling, and satisfying without feeling heavy or indulgent.
For many of us, food can feel complicated. We want to eat in a way that supports our health, but we don’t want to slip into restriction, guilt, or an “all-or-nothing” mindset. Recipes like this remind me that it doesn’t have to be extreme to be helpful.

These gluten-free honey muffins are sweetened with honey instead of refined sugar, and each muffin comes in at about 146 calories. They’re perfect alongside a meal, with a little butter, or as a simple snack that doesn’t leave you feeling deprived.
Gluten-Free Honey Muffins Recipe
(No refined sugar)
Makes: 12 muffins
Calories: ~146 per muffin
Ingredients
1½ cups gluten-free all-purpose flour (with xanthan gum)
1 Tbsp baking powder
½ tsp salt
2 eggs
½ cup 1% milk
½ cup unsweetened applesauce
¼ cup honey
⅓ cup melted butter
Instructions
Preheat oven to 375°F. Line or grease a 12-cup muffin tin.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, whisk the eggs, milk, applesauce, honey, and melted butter until smooth.
Add the dry ingredients to the wet ingredients and stir just until combined. Do not overmix.
Divide the batter evenly among the muffin cups, filling about ¾ full.
Bake for 16–20 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out mostly clean.
Let cool for a few minutes before removing from the pan.
