When you're walking through recovery from emotional or compulsive eating, simplicity can be your best friend — especially when it comes to meals.
One of my favorite go-to lunches is this easy Tuna & Avocado Sandwich. It’s quick to make, full of nutrients, and helps me stay on track without feeling deprived.
Here’s what you’ll need:
1 pouch of albacore tuna
½ a ripe avocado, mashed
Optional: a few tablespoons of chopped celery for crunch
2 slices of Canyon Bakehouse gluten-free bread
Simply mash the avocado in a bowl, add the tuna, and stir to combine. If you like a little texture, toss in some chopped celery. Pile it onto your bread — and don’t be afraid if it overflows a little! The flavors are rich and satisfying, and the healthy fats and protein help keep you full for hours.
