Avocado Patties. Mash one avocado and mix in one egg, 2/3 cup shredded cheddar cheese, and optional sprinkle of chia seeds. Divide into fourths and drop four balls onto a cookie sheet with parchment paper, then press down. Sprinkle with salt, if desired. Cook at 400 for 20 minutes or until golden. Delicious - has a strong avocado taste.
