Chicken & Bean Fiesta

2 skinless chicken breasts, shredded

Corn - 1/2 cup

Black beans - 1 cup

Rice - 1/2 cup

Mozzarella cheese - 1/4 cup


Peppers, onions, and/or salsa (optional)

Cook each separately. I sprinkled Lawry's Season Salt on the chicken then mixed the chicken, corn, black beans, and rice together. Peppers and onions don't agree with my stomach, but could be a delicious option. Top with Mozzarella and lettuce or put lettuce on the side with a light Italian dressing on it like I did. Delicious and only about 350 calories for 1/3 of the dish.
